Recipe – Citrus Fruit Salad

Combine in a plastic storage bowl: 2 oranges, peeled and cut into chunks1 grapefruit, peeled and cut into chunks1 tangerine, peeled and cut into chunks (optional) Cover tightly and store in the fridge until needed.

Recipe – Mediterranean Tuna Salad

Combine in large salad bowl: 8 cups of romaine lettuce, cut into chunks1 can of water-packed tuna, drained (6-1/2 ounce can)1 onion, sliced and diced3 tomatoes, cut into chunks4 black olives, halved1/4 cup of Italian salad dressing -or- olive oil & lemon dressing Toss to coat well. Makes 4 servings.

Recipe – Mexican Salad

Combine in large salad bowl: 4-6 cups Romaine lettuce1-2 tomatoes, dubed1-2 tomatillos, sliced1-2 stalks of celery, diced1 onion, sliced and diced Top with salsa and lemon juice for dressingSprinkle with chili powder or cayenne pepper to taste.
