Stir together in a bowl until the lumps disappear:

1/2 cup Arrowhead Mills Kamut Pancake & Waffle Mix
1 tblsp. honey -or- a small amount of Stevia
1 tlbsp. of canola oil
1/2 cup of water
1 tsp. of vanilla (optional)
1/2 tsp. ground cinnamon (optional)
1/4 cup of chopped walnuts or pecans (optional)

Spray cooking spray on a nonstick skillet. Cook on medium high, turning when bubbles form on top and the edges start to turn golden brown. This makes two 6″ pancakes or 4 or 5 two- or three-inch pancakes. I eat the whole recipe myself for breakfast with natural applesauce on top. Scrumptious!
