Snack: 2 millet rolls with Earth Balance Buttery Spread, apple

Supper: Out to dinner at the Daily Bread Cafe (Hospital) – Mashed potatoes, cooked carrots, green beans, tomato basil ravioli soup, water

Bedtime: Water, supplements, almonds, banana

Supper:  Spaghetti (DeBoles Jerusalem Artichoke Spaghetti) with Free-Range Turkey Meatballs in sauce, green beans, steam squash with onions, millet bread, raspberry tea, water, apple

Bedtime:  Water, supplements, almonds

“In everything give thanks; for this is God’s will for you in Christ Jesus.” (1 Thessalonians 5:18)

I used to think that it was totally illogical to give thanks to God for the trails and obstacles we face in life. When I pray, I certainly don’t say, “God, please sent me some problems and suffering.” Problem was: I wasn’t reading this verse correctly. We aren’t necessarily to thank God FOR the circumstance. Rather we are to thank God IN the circumstance. Presently I am working to build bone density and reverse osteoporosis. Do I get up every morning and say, “Thank you, God, that I have osteoporosis”? No, but I am learning to thank God for the many blessings that have come my way because of this diagnosis, such as:

  • My family and I now enjoy an extremely healthful diet. Before this diagnosis, we splurged on sweets and fried foods as much as most American families do.
  • Every day I now get to exercise, with more on the way!
  • All the aches and pains I used to have–which I thought were an inevitable part of aging–have disappeared!
  • I weigh 109, rather than 142, and I now fit a size 6 rather than a size 12.
  • My latest blessing had been coming to understand that I am valuable, not because the amount of work I complete in a day, but because of the LOVE with which I do whatever I do during the day. There is nothing wrong with doing less things, but doing them well. To do something well is worthy.

I thank God for these blessings, amazed at how God is turning the challenge into an opportunity for spiritual, physical, and emotional growth. I also thank God that my son set me up with this website, so that I can share my journey with you!

1 free-range brown egg
2 tbsp. green bell pepper, chopped
2 tbsp. red bell pepper, chopped
2 tbsp. onion, chopped
2 tbsp. of tomato, chopped
1 slice of crisp-cooked, free-range turkey bacon, torn into small pieces
1 slice of soy cheese

Beat one free-range brown egg in a bowl. Coat non-stick frying pan with non-stick cooking spray, or melt a tsp. of Earth Balance buttery spread in the pan. Turn the burner on to medium-high heat. Place the chopped veggies and bacon pieces in the pan, spreading them out evenly. Pour the beaten egg over the veggies and bacon. As the egg cooks, loosen the edges with a spatula to make the omelet easy to turn. When the omelet is cooked on one side, turn the it over. (If the omelet breaks apart, that’s okay. It’s just as yummy in pieces!) Tear the cheese into strips and place on top of the egg. Add salt and pepper to taste. Once the cheese has melted, serve and enjoy!

Supper:  Chicken, Long Grain & Wild Rice, Steamed Broccoli, 2 slices of Sesame Ezekiel Bread, raspberry tea, water

Bedtime:  Water, supplements

Supper:  Boiled chicken seasoned with Lowry’s Seasoned Salt and a sprinkling of Shake-and-Bake (original flavor), Long Grain and Wild Rice (Uncle Ben’s), steamed summer squash, pole beans flavored with all-natural turkey bacon (no nitrates), millet roll, water, raspberry tea

During the movie:  Almonds and Cracklin’ Oat Bran
