I don’t know about you, but it was h-a-r-d for me to give up forbidden foods. It took me a year to give up Diet Coke! Even when I was able to leave behind foods I craved, I held onto a ton of resentment, crying in pillow about how unfair it was the “other people” got to eat what they wanted and I didn’t!
Then I discovered a sensational secret: Using an “instead of” made the process easy, creative, and downright fun!
Here’s how it works. Rather than giving up an item, I replaced it with something better!
“Instead of” giving up frying mushrooms and onions, I learned to saute’ them in olive oil and beef broth.
“Instead of” giving up milk, which is low acid-forming, I replaced it with unsweetened almond milk, which is low alkaline-forming.
Surprisingly, I no longer felt deprived because I didn’t leave a hole in my diet! Instead, I filled the hole with something even better!

Want to spice up your meat dishes with a scrumptious, alkalizing salsa? This recipe for pineapple salsa, created by my daughter, Kelly, tastes great served over grilled chicken or fish!
1/2 red bell pepper, diced small
1 small red onion, diced small
1 tbsp. fresh cilantro, chopped
1 very small jalapeno pepper, finely chopped
Juice and Zest of one lime
Second, on the grill, place beside the chicken or fish:
Third, heat the mixture in a saucepan.
Add salt and pepper to taste.
Serve warm over grilled chicken, mahi-mahi, or other grilled poultry or fish.
Enjoy!

The long list of ingredients makes this look like a complicated recipes, but it’s not. Once you have the sweet potatoes diced, the rest of the prep is a breeze!
You will need:
Stock pot
2 tbsp. olive oil
2 cups onion, chopped
1/2 cup celery, chopped
2 cloves garlic, crushed
2 cups sweet potatoes, diced
2 tsp. paprika
1 tsp. ground turmeric
1 tsp. dried basil
1 tsp. sea salt
1/8 tsp. ground cinnamon
1/8 tsp. cayenne pepper or crushed red pepper
1 bay leaf
4 cups chicken broth or vegetable broth
1 tbsp. tamari
1 cup fresh tomato, chopped
1 can of organic lentils
3/4 cup green bell pepper, chopped
Directions:
1. Saute onion, garlic, celery, and sweet potatoes in olive oil for about 5 minutes, or until onion is soft.
2. Add paprika, turmeric, basil, salt, cinnamon, cayenne, and bay leaf. Stir to blend.
3. Stir in broth and tamari.
4. Cover and simmer over low-medium heat for about 15 minutes.
5. Add tomatoes, lentils, and green pepper. Simmer over low-medium heat for another 10 minutes, or until all of the vegetables are tender.
Enjoy!
Before breakfast: Decaf coffee with almond milk and honey (Yes, every now and then I have a cup of coffee, especially when I’ve been up during the night with a little one who is teething and fighting a cold.)
Breakfast: 2 scrambled eggs + 1 tsp Earth Balance buttery spread, 10 cherry tomatoes, Wild Berry tea + Vitamin C powder
Snack: 10 almonds
Lunch: Cocoa Cherry Standard Bar, 1/2 cup blueberries, 1/2 cup strawberries, 1/2 banana, water
Snack: Protein Shake with 1/3 cup of my favorite whole food protein powder, 1 cup frozen strawberries, 1 cup water, and 11 almonds
Supper: 1 Crab cake, 2 oz. turkey sausage, 2 oz. baked salmon, sweet potato medallion, summer squash, mushrooms & onions, broccoli, 1/2 cup So Delicious brand frozen dessert (vanilla), water, green tea (decaf)
